I’ve been loving this simple vegan pesto recipe and I decided to share it with you guys! Really tasty and takes up to 15min to make. 🙂
First thing first, you will need:
- 2-3 bunches of fresh basil
- Salt & pepper
- Walnuts (or pine nuts)
- Clove of garlic
- Fresh lemon juice
- Olive oil
- Nutritional yeast (optional)
I used mortar, but you can use a food blender or a wooden potato crusher and a bowl to make this pesto.
Firstly, wash the basil leaves and add them into a bowl you’ll use for the paste and start crushing. Gradually add pepper and salt (I used pink Himalayan); then oil, walnuts (I just prefer them more :)), freshly squeezed lemon juice and garlic. Oh! If you have – add some flakes of nutritional yeast! I didn’t have any at the moment, but it definitely adds some useful vitamins to your meal!
Crush everything until it becomes something that looks like a paste (must admit it’s hard to do so with a mortar haha) and give it a taste if you need to add more salt, pepper or garlic.
And you’re done! Told you, it’s really easy. 🙂
Goes perfect with your favourite pasta, potatoes or a breakfast toast. Good to keep in the fridge up to 3 days.
